Adobe Photoshop CS and Acrobat 7 courses online are pretty darn good.
So I've been taking these classes and they rock. I'm learning a whole bunch of new stuff. The Photoshop course is for beginners, but I love to take those courses because they always end up showing me little things that I hadn't though of. And this course is no different. The classes are through elementk.com. They offer courses in all sorts of stuff. It's really pretty neat.
